Cornichons are made with mini gherkin cucumbers, one to two inches in length and harvested before reaching full maturity for an extra-tart bite. Their tart, mildly sweet flavor makes them the perfect condiment or garnish to serve with classical chartcuterie items like patés, terrines and cured sausages.
